Job done!
My original wheel had a different clip design holding the airbag in place, which had us stumped for a while, but once we worked it out it turned out to be a lot easier to undo.
Push the left side of the metal clip down (or right, rather), out from under the black plastic clip.

Looks just like the Golf GTI steering wheel, minus the GTI badge at the bottom (I didn't want a GTI or R badge). Quick coding change on my laptop and erased the fault code for the steering wheel (due to disconnection), and all done. The new wheel is noticably lighter than the old one as well.

I have the 118 TSI DSG (it's in my sig) - leather feels a bit different to the old wheel but still feels/looks genuine OEM.

I found this wheel on eBay if anyone wants to preserve the 'Comfortline' look of their car while gaining DSG paddles. The starting price is a bargain too:
