Not sure what else I can recommend...your RVC module is not detecting a video input.
Seeing as your camera was working with the RNS510 you'd like to think the camera itself is good.
Without another RVC module to rule out your 7N0 RVC module all you're left with is checking all your wiring is correct.

    Composition Media / RNS510 replacement

Further to this and it may be a really dumb question...

Does anyone know whether I can use the existing installed microphone and wiring or do I need to replace it with the one that came with the Composition? I understand the requirement to use the new cabling for the CarPlay capability but wondering whether the wiring for the microphone is different on that header / connector.

Struggling to get VCDS to see the Composition etc which I need to program for Dynaudio, bluetooth etc. Is this because my CAN Gateway needs to be upgraded / replaced?

I just moved the existing blue header to the new block but I am wondering if there is a specific coding I need to use for the bluetooth / handsfree module that came with the RNS510 factory install.
Would the microphone wiring be different between RNS510 and new head unit or is it purely a coding issue?

I managed to get Dynaudio coding and fix the audio quality using the following:
    Address 5F, long coding, byte 11 - change from 01 to 03

    Address 5F, adaptations:
ENG122229-ENG117764-Car_Function_List_BAP_Gen2-Amplifier_0x2D,not activated ==> change to activated
ENG122229-ENG117765-Car_Function_List_BAP_Gen2-Amplifier_0x2D_msg_bus,not activated ==> change to "Databus Infotainment"
    MAS00950-Audio Parameter,0

    ENG117919-Startup_Screen_Sticker_HMI ==> 00 02 for Dynaudio

Mic in pins on Discover are pins 1 and 7 on the green 12 pin connector block, same as it was with the RNS510.
Check your adapter harness that it has the pins being fed from the car harness to the Discover connector.
    There is no coding required.
Make sure your old bluetooth module has been physically disconnected.

Okay I am way confused now. My head unit came with 2 looms,
    Discover Media retrofit-capture-jpg
Carplay which has a green header and then a separate microphone with a blue header.

    Discover Media retrofit-blue-jpg
Here is a shot of the 2 blue headers with the original RNS510 one on the left.

I feel like I am being a total noob with this. Do I not need my factory Bluetooth module any longer? Where does the installed factory microphone currently attach to?

Sorry for all the dumb questions.

Original bluetooth module comes out of the car. Discover has bluetooth module integrated inside the head unit.
If you had voice control with your existing RNS510 then the factory mic would have been wired into pins 1 and 7 on the green 12 pin connector block. Then mic out from pins 4 and 9 go down to the bluetooth module.

If you ONLY had bluetooth mic, no voice control, then the mic pins aren't actually connected to the head unit at all, they only connect to the large 54pin connector.
If that's the case then you need to get those pins up to the back of the head unit. Easiest way to do that would be to just run a pair of wires from the back of the head unit down under the carpet to the bluetooth wiring loom (assuming it's in the factory location) and splice into the mic wires (normally black and transparent wires, next to each other can't remember what pins).

If your bluetooth module is behind the climatronics panel then just pull the mic pins out of the large 54 pin connector and plug them into the green 12 pin connector block on pins 1 and 7.
They are at the opposite end of the RVC pins on the blue connector on the right in your pic above.

Had the full voice control module and bluetooth module is under drivers seat. Will disconnect as suggested.

Appreciate your guidance on this and will take a further look. The green header / loom that came with it has the USB and 3.5mm connector but the 3.5mm wires appear to be using pins 1,2 & 7. The USB obviously goes to the special port on the back of the unit but also to pins 4 & 5.
I found the following pinout diagram and I think this is correct for my unit based on what was supplied and the experiences I am having with configuration.
    Discover Media retrofit-img_7964-jpg-46054e3e3e7b939400e557fe7d1ba7fa-jpg

Is there a recommended way to swap the pins out? I feel like I need to take my existing MIC pins and move them to 1 & 7 on my blue connector because when I use the supplied microphone (blue connector) it works with the head unit. The other option is to install the supplied microphone but that means pulling heaps of stuff apart to run the cable which I would prefer to avoid.

Any ideas are appreciated. I feel like I owe someone a beer or 2 already.

Yes that pinout is correct. Sorry I was being a bit confusing there ignore the colours of the connector blocks as the RNS510 connector at that location was green, its blue for Discover but colour isn't important, just the correct pins in the correct locations.
Mic is on pins 1 and 7, RVC is on pins 6 and 12.
3 and 4 are USB detect pins on the other 12 pin connector block. Aux goes there as well but is pretty much obsolete these days.

To swap pins just use a jeweler flat blade screw driver.
Open up the connector if you can't already see the release pins (there are different manufacturers of these if they are factory then you need to open each side by prying them open, then you'll see the pin locking lugs)
Push down on the triangle shaped locking lug you can see on the long flat part of the pin from the side, while pulling it back out of the connector block.
insert till it clicks into place then push the plastic locking parts back into place (if it has them)

Thank you so much. Will give it a go now. Apologies for confusing you with the colour etc.

Is there a way to get Climatronic output showing on the Discover like the RNS510 had?

Hopefully the RVC install after this will be less painful now that I am starting to understand how it all hangs together.
