Well I updated to iOS11.4 tonight and the issue is gone!!!
Had an issue with my head unit and Apple Carplay recently. When making calls it sounded like I was talking underwater (well that's how my wife described it).
Dropped past VW dealership today to see if there was some way to reset the head unit and they informed me there was an incompatibility betwee Apple Carplay and the latest version of iOS 11.3.1 which causes voice calls to get the tin can/underwater effect.
No fix other than if I can revert my phone and/or wait until the next version of iOS comes out with a fix. Until then it's revert to Bluetooth for calls...
