You may have an older CANBUS so to avoid any battery drain issues I'd go for a Version B unit and get software under 2600 that way there won't be any chance of it. If you're desperate to get the Version C with 2840 Firmware you may have to upgrade the CANBUS. Not a big deal or overly expensive but if you want true plug and play then go the safe path. If you're buying the unit off Ebay just tell the seller you need a version B and to downgrade the firmware to under 2600. They should be able to do this.
Upon plugging in your probably wont be able to view the GPS on your MFD unit , you need to do a bit of VAGCOM work and tell the car that you have a GPS unit now, then it will come up. You can do this yourself if you have a VAGCOM and there's tutorials online or just wait for your next service at the dealers and ask them to do it - its a 5 minute job.
Lots of bluetooth options for it but the easiest and cheapest by far is the Fiscon Basic Plus unit from Kufatec. Again completely plug and play and it will display on your MFD + display extra stuff too like boost pressure ect. The premium bluetooth kit is apparently better but it can be a pain to install and code to the radio. I've read about lots of issues. Again go with whats safe. Here's a link to the Fiscon unit.

Not sure about Ipod connection and controls - I know it can be done but I don't think its as simple as plugging a cable in - I think there's some kind of Ipod module you need and probably more vagcom work.
