Mixing Oils - Can you and should you?

I've recently had the MkVI Cab (1.4 Twincharger) serviced and they have used Fuchs GT1 Pro C-3 5W-30 (which is VW 504/507). My concern now is that I'm about to drive interstate (for Nationals woooo!) but don't have any spare oil that I could use to top it up if and when it's needed (on a 2,000km round trip).

Bursons is where I've been told I can source some and there is one local to my house (assuming I can get there during business hours) so that's Plan A.

But the question, if I can get another VW504/507 rated oil is it OK to mix different brands? Is there any detriments to doing this?

A quick and dirty search shows this in SuperCheap:
Chief Chicasaw WRX Engine Oil - 5W-30, 1 Litre - Supercheap Auto Australia

Never heard of the brand before, it's just something I have a chance of actually getting before leaving the state.
