Good stuff Stu. My first car was a Beetle too, though it didn't get most of the TLC it needed and deserved. I say keep it air-cooled but I'm a bit old fashioned that way. Go a 1835cc or sumting and you won't need no water (but plenty of $$$)

repainted the inside of the whole car today all gloss black
got the old man around and he sanded the whole outside... just some more filler to go on the left front, bonnet and the rear lip and she is ready to paint
The 1776 in my old man's Karmann Ghia is pretty good. Twin 40mm Kadrons, HEMI heads, counterweighted crank, berg cam..
There's no need to go for stupid capacities and massive carbies/heads/cams for a daily driver. The Karmann goes quite well for what it is (massive bottom/mid) and gets pretty damn good fuel economy, as Dom, Jarred, Josh can attest to.
To be honest, you'd get jack of a 2.3 with big IDAs and a high overlap cam REALLY quickly.
By all means buy that engine (that's pretty cheap if it's in good nick and done no work, however it depends on what heads are on it too), but i'm just giving you some advice.
