    Pull all four wheel sensors?
    Remove the impulse rotors?

I suppose if you really wanted to you could always remove the ABS control module (under the rear right seat)? But that would be the easy way

I'm guessing really, but any of those should stop the ABS from working.

I`d remove the big heavy pump and controller in the engine bay and replace the lines with ones from a non ABS Mk3.

The loom inside the car will interconnect into the main loom and can be removed. Make sure you unplug the two relays for it that are attached to the top of the fusebox.

Provided the ecu is from a manual car, it will not need adapting for no abs. If its from an auto you will need to adapt it using vagcom as otherwise it will run in limp mode.
