I'm spending a lot of effort maintaining the original comfort of the ride and sound as well so don't want to sacrifice that. Is that asking too many things?
Not if you're happy to pay for a good set of coilovers.
Also, as far as installing them, it isn't too hard to do if you're handy &/or have mates who are handy with cars and tools

Mate I'm in your situation and I honestly recommend the CX racings. I've driven a VR6 with them and they improve the comfort and feel of the car massively (feels quite upmarket actually) and also stiffen it up heaps. Just my opinion. i cant speak for how long they'll last though...

I havent been in a car with the CX racing, but from what I've read they are what I would be putting in an mk3 if I still had one.

Three criteria have been specified here:
    1. Moderate Budget
    2. Restored or improved handling with minimal impact on ride
    3. Drop for improved appearance

IME, you will only get 2 of the 3 although #2 is very subjective (what someone finds comfortable could be unacceptably harsh to another plus do you really know what good handling is? - Does your VAG handle? It depends...)
