I don't think negative 2 degrees would be an issue on the track......unless it was a flat track with no corners and you needed the traction.
Personally I always have mine set to about that on the road and I drive it fairly hard and I still get even wear....
Yes you can buy adjustable top mounts.
You could also use offset (strut to hub)bolts, they'd have to be good quality(high tensile) bolts because they'd be smaller diameter, and it'd be a bit of a pain to set the camber, but once set problem solved.
You could also redrill the holes in your hub and weld/add material to them where needed, but I think that'd be a last resort.

back to the topic.
the only issue i've running an 8v/16v on widetrack is sorting out the power-steering pump and pully. the VR6 runs a serp belt for everything with a whole bunch of tensioners. you need to change to pulleys to a v belt otherwise nothing will ever line up properly. with the v belt pulley, it'll stick out about an inch and just run a seperate belt off the crank specifically for the power steering or over the air con compressor too (if you have air con)
oh, also change rear engine mount to hydraulic VR6 from the crap rubber one. ( you have to any way because the wide track subframe only has provisions for the cup mount )
