VW's knowledge of your car only extends to how it left the factory, and any subsequent warranty repairs.
To assume that they're going to send you a letter about the used airbag you retro-fitted from another car, is naive at best. The onus is on you the owner, to chase that one up, as per above.

It's interesting that the Golfs are listed in the affected vehicles, but the Jettas are not. Aren't they the same steering wheel and airbag layout?

I gave VW a buzz and they directed me to their online FAQ. They start by somewhat playing down the risk by stating that the 'alpha' Takata airbag is the unit that has been killing people and that no volksys in Aus are equiped with the 'alpha'. But, it then goes on to say that the non-alpha airbags, older than 6 years, pose a risk of killing you if they go off. So yeah, looks like a number of us have a ticking time bomb. The person I spoke to said they hope to start notifying owners in the next month. Don't go stacking your car in the meantime.

This.
The list is the potential worst case amount of vehicles effected.
Takata are not VW's main supplier of airbags. They are just one of the suppliers they draw upon.
Takata are more likely to supply to Chinese-built VWs (which we don't get here), than European or South American-built ones.
I suspect the number of effected vehicles in Australia will be quite small.
