Avoid the beaten path and there's fun to be had.
Kyogle Road is pretty twisty (Murwillumbah to Kyogle) and the Gwydir Highway (Grafton to Glen Innes) is pretty good too.
Closer to Sydney there's the Bells Line of Road (Windsor to Lithgow), Old Pacific Highway (Hornsby to Gosford), Royal National Park (Heathcote/Waterfall to Wollongong) and Putty Road (Richmond to Singleton).
I've driven those, and they're pretty entertaining.
Further west, Mudgee to Bathurst via Sofala has some great hills and beautiful sweepers (as well as a couple of wicked blind double-apex bends to keep you on your toes).
The Alpine Way down south is reportedly good too, though I haven't sampled it personally.
