I thinka big thing would be the hub not being big enough (diameter wide) to have the 5x120 pattern drilled onto it. (ie, the edge of the wheel bolt holes would be too close to the edge of the hub)
Would it be possible to redrill the MK6 hubs/rotors to 5x120? I know of a few Uber cool wheels I can get in BMW fitment only!!
I don't see anything prohibiting this unless the hubs are scalloped on the reverse side.

As Jarred said, there may not be enough on the rotor/hub to safely redrill a wider PCD into them.
Have you considered an adapter? 5x112 - 5x120 would be about $500 a set and there are sooo many nice BMW wheels around.
Or look into 5x114.3 wheels, plenty of decent jap wheels around going at good prices with high offsets to suit a MK5/6 (look at Toyota wheels for eg)
Either wobble bolts or widened holes on the wheels will allow the 5x112 pattern.
