I would appreciate your thoughts on these German made wheels regards potential rubbing and appearance with standard suspension - RH Alurad ZW6 Prestige 17x8 ET35 all around.
The German car below has RH Alurad ZW6 Prestige (polished centres) 8x18 ET-35 HA: ET-30 fitted. I am intending to stretch my existing Bridgestones and I'm not willing to sacrifice ride comfort by going to sports suspension/18s and 35 series tyres.

215 streched on an 8" wheel shouldnt scrub at stock hight... as rolling diameter is smaller... means more clearance... but i only know from going from 17x7 with 215/40/17 to a 18x7.5" with both 225/45 and currently, and better fitting 215/35. but comparing the two here [18x7.5 215/35 v. your 17x8 w/ 215/40]>>> Online Wheel & Tyre Fitment calculator. Offset, Tyre stretch and Rolling Radius calculator and aslo comparing to the original 215/40/17 on a 7" width... there really shouldnt be any problems...

May need to consider lowering springs to get the correct look. Is it possible to get softish springs that will lower but not stiffen the ride? and roughly what could I expect to pay to have these fitted front and back?

You may be hard pressed to find lower springs that are still soft. I haven't come across such a spring in my time.
If you have a shorter spring with the same spring rate it will bottom out easily. So the are by nature a little stiffer then OEM
And majority of people don't buy lowered springs for a softer ride. They want more handling with there low as well.
Having said that the h&r 25/40 are fine up front, but the back is harsh on big bumps. The 15/30 versions might not be as bad.
Springs range from $250 up and depending on the Wksp can be $350 to $600 to fit so your looking at $600 to just under a G for parts and labour.
