Only trying to give you the benefit of my personal experience. I fitted my Eibachs ($200 brand new off this forum IIRC) at about 95k & by 105k I was looking for some bargain dampers. I finished up with Koni Sport from ECS when they had a 40% promotion ($800?? can't remember - you forget the price when the quality is good)
I don't recall if you said you will DIY or pay for the install. If DIY then go crazy but budget on getting an alignment done every time you R&R the front end.
If you are paying then count on the mechanic charging 1.5-2 hrs for the front spring change (with or without dampers) & .5hr for the rear spring change + 0.5-0.75 hr for the dampers.
Depending on how many km you have done, heavier springs will accelerate the wear in your stock dampers. At best, you'll get about 100,000km with your current setup before (front end especially) starts bobbing around a bit much (sure, most people will put up with it & be oblivious). Assuming you have about 40,000km now, you'll probably get 20k-40k if you just do springs - the heavier the spring rate, the quicker the wear.
If you can find a complete set of GTI dampers & springs, great but don't expect any amazing leap forward in handling & the drop will be almost un-noticeable.
Coil-overs can be had at quite reasonable prices - like $600-ish. I would have gone that route except I already had the Eibachs.
