I had the same question recently and have bought 225/40x18 wheels. Should be sticking them on my (currently 16") standard height Octavia soon (will post pics in my thread - below). I am worried that, as Brad says, they will look lost because the car is not lowered. Also that they may be too uncomfortable. There is also quite an increase in unsprung weight with larger wheels.
Which wheels - give me an opinion

You are on 8" rim width now aren't you? When the 225/40r18 (25.1" diameter) wear out, get some 235/40r18 (25.4") - they'll fit an 8" rim. You might even get away with 245/40r18 (25.7") but it would depend on the wheel offset.
I ran 25.7" diameter on Eibach Proline without any issues.
I also ran 25.9" but there was minor scraperage up front if the suspension compressed when cornering. It wouldn't have been an issue at standard height & if I had an Octavia Scout (I know you have the standard height stealth AWD - just sayin') it would be my diameter of choice.
