Cant comment on the quietness as my car is a TDI, it was unchanged though as far as I could tell.
Can definitely recommend Bluefin as a cheaper alternative, much easier too.
The Bluefin stores two maps, a stock and a remapped. You should be able to change the stock map stored on it to an upgraded map from the dealer without too much hastle. I dont think Superchips would issue another remap for the upgraded map though it would likely stay the same.

Like mentioned the bluefin controller stores the original VW setting and the modified one. Changing it over takes about 10 minutes and its dead easy - you just plug the unit into your diagnostics port and select either stock or modified on the menu. I had a new ECU installed in mine by VW so the original map on my unit was worthless - I simply explained this to superchips and they reset it all and allowed me to install the new VW map into the controller and then again did a new performance map based on this new map. Didn't cost me anything.
I really don't see the benefit of spending anymore on more expensive chips.
I doubt very much the car would get louder - if they adjsut the boost level you may hear an increase in induction noise but that would be about all. Mine didn't sound any different after.

Other remap companies will reissue a new map (or maps in my case) if the original is updated during a service so I would ask Superchips about this. They may wish to incorporate some of the new mapping in their remap(s) - you would just have to redownload the updated 'stock' map and send it back to the tuning company.
And I agree that it certainly pays to look around at all the (reputable) alternatives before choosing a remap if you aren't going with a "Stage 2" type remap and hardware package.
