Funnily even my mechanic recommended I take my misses Polo GTI to VW for the first service instead of going through him.

Stage 1 = ECU software only (235kW)
Stage 2 = ECU software + Dump Pipe (250kW)
Stage 3 = ECU software + Dump Pipe + Turbo Upgrade (IS38 turbo = 288kW)
Personally I would run the car in (possibly to first service), get the car fully checked over for any potential warranty issues for engine/drivetrain and then go for it.
Yes there is always a risk involved. If you only go stage 1 there's no hardware changes and it's possible to revert back to stock, however no guarantees that it won't be traceable.
For people that are worried about warranty then the tuning boxes have been proving popular in more recent times - things like JB1/JB4. Though gains are about half of the stagee1 tune and I don't think you're able to accommodate hardware modifications with these boxes so you're limited to mild gains only (but also at moderate cost).

Different tuners will tune the cars slightly differently.
For example APR (which used to be big here in Aus) will hit the boost hard early and tail off towards redline. Whereas other tuners will be more linear and pull strongly to 6,000rpm.
I'm not sure what/if there's differences between the GTI software and that in the Tiguan, however it will probably take the tuners a little bit of time to develop Tiguan specific files. Hopefully it's not a complete rewrite and a lot of the development work that has already been done on other MQB platform cars can be lifted and used for the Tiguan.
