So I picked up a MK7.5 exhaust today, can I ask if this the valve that if left opened will result in a louder exhaust? If so, do I just manually open/close the valve by turning that round dial. Does leaving it closed have any restrictions on the exhaust?

Yes correct. You an hear a lower or higher pitch when you close/open the valve. If you want to check if it's closed you can put a piece of wire down there.

It is slightly more restrictive but you probably wouldn't notice the power drop. It will be minimal.
