This sounds like a good idea though I guess I should figure out exactly what engine variant I've got first, though I spent a fruitless couple of hours on the web trying to do that yesterday. And I don't actually have the car here right now, it's at the smash repairs on account of someone backing into me. Anyway, might give tarmac a call.
This is probably a really silly question, but is it cheaper to go from a stage 1 to a stage 2 tune? Would that rely on the stage 1 havign been done properly? Does the stage 2 require non-optional mods?

Um, aren't they both the same photo? I looked back and forth and couldn't see the difference and noticed that marks on the ground are the same. They both look like mine though going by things like the oil filter location. I thought I could work it out from the VIN but it doesn't seem that straightforward.
Oops, sorry about that. Definitely Gen 3.
Ok so if its a Gen 3 then its got the tiny IS12 turbo which should have basically zero turbo lag. Your car should be making strong torque from about 1,500rpm onwards until about 5000rpm when it will start to die off (small turbo is great for low down torque but cannot sustain the power at higher rpm).
Im of the understanding that they have loaded on the wrong tune because a stage 1 tune (the correct tune) should have ZERO compromises on driveability over standard, and should be an improvement in every way.
The stock tune on that Scout makes all of its 280NM at 1350rmin! No aftermarket off-the-shelf tune will do that, they are all geared towards maximum performance (which occurs higher up in the rev range) and not low-speed tractability.
Tha APR EA888-3 tune makes maximum torque at 3500rmin ... may be massively more torque but for this application that seems to be pretty useless.
This is the problem when putting a generic tune for a particular engine model (such as a EA888-3) on a car that does not benefit properly from it due to a car-specific difference in its stock state. The stock tune for the Scout is different to say a 6C Polo GTI, both 1.8TSI EA-888-3's but very different in power delivery with basically the same hardware. And FYI, there is now way a stock Polo GTI makes 280NM at 1350rmin!
We have seen this many times before in the VAG world.
Talking to APR will not help, unless you have them remove the tune. A custom tune (and note it will only be some local calibration done on dyno of an off-the-shelf tune) may solve this problem, but that will come at quite an expense.

I had a Octavia Mk2 with 1.8tsi BZB M6 and a Bluefin tune (and Golf R intercooler, round hard pipes, GFB DV+ and other bondage gear) and now have a factory stock 2017 1.8tsi gen 3 DSG Golf Alltrack. I'm not sure why you think it needs a tune to tow a lightweight camper trailer. The Alltrack feels more powerful than the Octy but I have been driving a 2.2 tonne Pajero Sport with 133kW/430Nm for 18 months and anything feels quick after that.
I am seriously in love with this Alltrack (in a purely platonic way).
Take the car back. Tell them you are totally unsatisfied with the tune and you want it removed and a full refund.

Hi Brad. Refund would be great but when I took it back it was all It's fine/no it's not/yes it is. And now it's you shouldn't have left it so long and I need to pay more money to get it taken back to stock. In hindsight I probably didn't need the tune but I came across a guy with a stage 1 tune on his 1.8 Tiguan and he was evangelical about it. Maybe I'm just hoping that if I take a dyno readout back to them that clearly shows something wrong maybe they'll come to the party. Though I'm finding it tricky to book in to a dyno somewhere. Then again Sharkie's last post has given me something to think about, though looking at the power curve for an apr tune on a gen 3 (the one Lucas's posted above) it still seems like there's something seriously wrong beyond the amount of low rpm power it might have lost based on the different stock tunes.
Lucas - I don't think I was ever expecting to get rid of turbo lag. My understanding is that on these things the lag is almost entirely throttle and DSG related. It's mostly a problem when you finally see a gap at a roundabout and you jab your foot to the floor and it pauses way longer than if you just eased into it. And just when you've realised the cement truck is now looming too close is when it decides to leap on in. I find it curious that they set these things up like that at the factory. Lots of people complain about it and It's the one thing about the car my partner doesn't like.
