I was intending to do that as well, and bought some black roof rails off a wrecked Golf 7 wagon and was going to get them painted gloss black to match the rest of the shiny black trim.
As stated by other it looks like a big job requiring removal of the interior roof lining etc. I don't think I want matching black roof rails that badly

Yeah I called my dealer the other day to get an update on my car. Firstly he said it was good news and that it has already been on the ship for a week. I called the following day to get a VIN and he said it was a mistake and the new estimated delivery was May-June.
To be honest with you I've just taken his most recent response with a grain of salt because they keep changing the estimate every 5 minutes. I'm going to stay away from my local dealer when thinking about purchasing another VW in the future. Since I bought it in August, I've had not one single update from them other than the times I called them directly. Last week I had to teach my dealer what a VIN was because he thought it was the 6-letter number plate combination and said he wouldn't have the "VIN" until it is delivered to the dealer. No joke.

Yeh wow that's brutal! I've figured I'm just going to wait to mid December and follow up then because it's too frustrating to deal with them half the time. And the same with you a little dissapointing I always have to call for an updated when dropping cash on their most expensive golf.

That’s sucks !! I think I might try to get them dipped... when you got your rails did u see how they were fitted? Found some conflicting info on the web, some pics and drawings suggest u can pop the black trim off and remove from the top ... see below

Where are you located ? If you are close to Canberra or visit there you are welcome to have a look at the black roof rails I bought.
The diagram you have linked to is for the previous version roof rack with 3 attachment points (Golf Mk 5 ?). This is the version on my Octavia vRS (I know because I swapped the chrome roof rails on it for black ones), and it was quite easy to remove and it was all done from the outside.
The Golf Mk 7 (and Mk7.5) only has 2 attachment points per rail and as far as I can tell from looking at the one I have the trims are fixed in place (not removable) and the captive bolts go all the way through the roof and the nuts are attached from below (hence the need to remove the roof lining to get access).
