There are two sound factors. The in cabin soundaktor thingy (sounds like a WRX) is controlled from the drive mode or engine sound setting in individual on the screen.
The exhaust crackles and pops, which I think that you are after, are when the engine mode is in RACE (or when activated through individual) AND you need to have the DSG in sport mode as well. Then, you usually need to have the windows down and the stereo off, otherwise only those in the street will hear it. If you drive around in D, you won’t hear crackles when you lift off.
Also, if you have a hatch, then you need to re-press the engine mode button every time you get in order to open the exhaust flaps which close on engine shut down. Us wagon owners don’t have that issue because our cars are better and don’t have stupid flaps :)
