OK, had a look at those Audi wheels.
You gain 2.3mm from the strut - that's fine/good - but you're inboard 10.4mm over the Pretorias. Given these already don't look that wide/flush, I don't think you'll be happy with the result at all.
I suspect you might still get away with the brakes, although I haven't seen what is fitted to the SE.
I feel like this guy is having a bit of a joke though, seems very expensive for a used set of wheels with some minor damage and even old tyres. I would be looking to spend on something else, although if the budget is $2k with tyres then your choices will be very limited (unless you go to the dodgy online rep sellers, they will fall over backwards to sell you fully sick high kwolity gear).

2k with tyres won’t buy much, certainly nothing new!
2k for wheels only, I’d look at VMR, Rotiform, maybe Neuspeed. Be aware there’s fake/replica versions of even these cheap brands!
I’m currently tempted to drop down to 18’s (for comfort) and maybe go to a wider 245/40/18 tyre... need an 8.5 wide & ET45 to make it all fit though I think.

The Rotiforms (cast) are super heavy as you know, but you'd like to think they're pretty tough as a result. Having said that their new FLG model would be pretty close to the design that OP was looking for, and I suspect would suit the Mk7/7.5 pretty well.
I put Neuspeed one category up, only because they have developed a good reputation for strength and being light weight (and as a bonus for OP, designed to take the original VW centre cap back in).
Avoid reps definitely. Or reps of reps in some of these cases, as generally VMR have built a reasonable reputation.
As for the 245s, I am sure there have been a couple in the thread.. maybe. Google? lol..

Righto. I’ll keep a look out for 18” in this brands. I don’t necessarily mind spending a bit more on rims (I see tyres as a separate cost), but I’d prefer to keep it under 2K.
I’ll look into the wheels Dutch mentioned above and keep my eyes out for a deal. I’m starting to think silver isn’t the way to go any longer, just black.
I can get you into BBS SR, SX or XA in the vicinity of $2k. Unfortunately OZ Leggera or Ultraleggera will be a bit over that.
Neuspeed is quite likely cheaper direct from overseas.
VMR will be under $2k in Australia, although their prices have crept up over the years. Rotiform in Australia may be from one of the online sellers..
There are loads of other cheaper options out there through UK online sellers in particular, but you do need to consider the duty/GST and freight costs on top. And of course the drama if there is any kind of damage at all in transit..
