Note as these are Porsche wheels with a 5x130 PCD an adapter would have been utilised.

Note: not a legal fitment in Australia

Does anyone know the most aggressive offset i'll be able to get away with on 19x8 or 8.5 wheels, with Eibach springs fitted without having to pull or roll the arches?

Guy was running VWR x 8.5 ET50 on VWR springs early in this thread and said no rubbing even with load.

Dropping below ET50 would likely see some rub up front unless the camber was played with.

Should be able to go lower on offset up back as the rear guards are fairly generous on the Mk7.

Avdo was at ET44 and has no rub on stock R suspension, the Eibachs would be lower but if they do tuck the fronts a little then may be able to get away with it.

Obviously this thread does feature much more aggressive fitments than this but those cars will also feature heavily worked suspension adjustments as well.

The front fenders have a screw located at 12 O'Clock (same as the MK5 / 6 models), so depending on tyre profile, you can bend this in / remove it if it's your sole point of contact.

A little personal bias creeping in again on the OZs. Note that the car in the third pic would be running 18 x 8 ET48s.

Another German brand with a reasonable selection of wheels: DIEWE WHEELS - Startseite . These five spokes are also available in 17 x 7 and 19 x 8.5 and numerous different finishes, as pictured in 18 x 8 will set you back around $1,800 ex UK including freight, duties and taxes.
