Yep. That combination is everywhere in Europe. You could even fit 17s, as many over there have done for their winter tyre
Question would the normal GTI wheels (18") fit on the GTI performance? Even though it has larger brakes...

Do it!
Although I'd be mimicking this GTI and using the black on the mirror caps. And consider where you might want to go with the wheels as well - you'll want black or at least a plastidip/powdercoat option if you're still looking at doing this.
The wrap is fairly straight forward, pick your color and have it applied, and when you're bored have it removed.

That's a pretty fair formula, and totally possible at the right time and right place (ref my post with copy of invoice).
The Mk7 definitely rides a lot better than its predecessor but the 18s will always ride better. You'd be buying the PP if you planned to track and wanted the tricky diff or from now on wanted xenons. If I'd gone for one I probably would have stayed on 19s and just bought some decent wheels.

The GTI looks great in yellow. I wonder how it would look in something like renault victory yellow

That'd look smart too.
For those that don't flick through the wheel thread here's another yellow example - with black OZs: The Official Mk7 Wheel Thread
That SF mob tagged in Lemonskins pic are a German specialist in wraps - if you're bored google their work, some eye catching stuff. Again in the wheel thread there's an orange Mk7 GTI by them with black Talladegas and a Mk6 style rear diffuser with central pipes: The Official Mk7 Wheel Thread
