We are looking at getting rid of our fully optioned 7.5 GTI Performance and started looking at prices on line. I am absolutely flabbergasted at the prices being put on these cars, surely they aren't actually getting +30K or are they. We looked at trading it some years ago on an R and was offered nowhere near the prices of today.

Covid tax. Make the most of it while you can. Any 2nd hand car that is in any way desirable or performance oriented has inflated prices at the moment.
