Could also be sudden reaction being taken up by the driveline and engine mounts. I have experienced this in other high powered FWD cars, they use soft torsional dampers on the engine to reduce NVH, but when you get a sudden whack of torque (like tyres suddenly gripping after spinning) all the torque is reacted by the mounts and can feel like a sudden bang that you are describing.
Not sure if the VW setup suffers from this from personal experience yet, but worth looking into.
I'm finding that launch control from 2200rpm works much better than 3000rpm and avoids the problem

First time I experienced the reaction of the traction control, I thought I'd run over the kerb (I was turning left at a set of lights, on a wet road, when it kicked in)!
The interesting thing is, after the 15k service, the traction control seemed to activate a lot less harshly, the 'bang' had all but gone. I assumed that a firmware upgrade had been applied during the service. On the other hand, it may be that the conditions haven't replicated themselves and that my driving style has finally adapted to the characteristics of turbo lag and DSG!

I bet its the bush in the dogbone bashing the mount. its pretty soft from factory.
Being new to VAG I'm not familiar with the "dog bone" but I will look into that - thanks for the tip
The launch control is not a documented feature of the Skoda, it just seems to be in the firmware of all DSG's
Stationary (level surface, won't work on a hill), engage sport mode, turn off stability control
Now hold left foot on the brake, right foot on the gas and pick your RPM
Release the brake and the car will tear off the mark efficiently
Once you get her moving you can get deep into the throttle
Don't put your front wheels on the white lines
Don't try this on a broken/crappy surface - pointless
Stock ECU works fine
Flashed ECU needs more restraint with the throttle
