Yes so moral of the story is check your state rules/regulations on legal tyre fitment if you're looking at rim/tyre combos and also what tyres are available in those sizes.
As has been previously stated if you can keep to more common tyre sizes you're more likely to find tyres at a decent price.

So I have purchased some new wheels, but have decided to fit them to my MKV for the time being and let the missus keep driving the Octy, they are 18x8.5 18s VMR v710s in Hyper Silver.
I still need to purchase tyres for them but am unsure on 225 or 235 as to what will fit, I am going to lower it on some H&Rs with a 30mm drop, gonna head over to the MKV forum and see what people suggest.
One day the rims might sit beneath the octy

They are my fav rims for sure. Can't wait to see them on either car. Will 225s fit on 8.5 inch rims? Will be some stretch for sure.
A few guys on here didn't recommend 8.5 inch rims nor 235 tyres (on 8 inch rims) on the occy. What's the ET of the VMRs?
225s on x 8.5 is fine, albeit there will be some stretch (depending on your definition of course).
The VMRs will be ET45.
The 235s will often be cheaper as 235/40 is a Falcodore sizing, although the 225s can be bought fairly priced if you hunt around (eg the Goodyear info under the relevant section). On the Mk5 I think you'll want 225s to minimise any rub, the 235s will definitely cause more issues in that regard unless you start fiddling with camber or the guards.

It's more common for the VMR wheels to be ET35
They do make ET45 - but most people got for ET35
ET45/8.5"/235 is going to have very little clearance to the shock
ET35 will increase the outside poke
I would expect some rubbing with 235's
