Does anyone know what the safe limit of boost for the stock turbo is? I assume it already runs a fairly high level (1bar or so?) I think a tune/chip will be ample for me, just trying to see if a tune is a long term safe thing (i.e. if the stock engine in another car can do 190ish KW, then surely a tune that takes the skoda to say 180kw is "safe")
i don't think that an extra 10kw makes a tune "unsafe". I'd be more concerned about Af ratios and where it makes the power & the width of the power band. Simply go with a stage 1 tune with a reputable company.

Extra 10kw? Most of the "stage 1" types of tunes seem to offer around the 180kw mark.

AF ratios and power/torque curve are whats important. Just want it to feel a bit "peppier" and a bit more turbo-ey (not a word, but you know what I mean). It gets power down reasonably well for a FWD. But I was spoilt in my RWD with the amount of grip on the launch it had

You wrote of 180 & 190 kw, therefore 10kw difference. Must have misunderstood you.
