I've had the lower section of the dash off in my golf, it's really not the difficult to do. Look here:

Should be a good start
Guh so another little problem rears its ugly head in my Golf.
I have this really strange issue and hoping someone can figure out what might be causing this. Basically I can hear a very faint creaking coming from the centre of the dash. As for the sound, the best way I can describe it is like a noisy hard disk reading and writing. It also sounds similar to the aircon vents changing from recirc to circ. There is no way in hell I am pulling the dash out myself (it looks way too complex unlike my previous Falcon) but would like to hear some ideas on what it may be.
I only started noticing this sound in the past week.
I'm too afraid to ask a VW specialist to pull out the dash because I'm expecting to faint when I hear what they will charge...
Thoughts?

Yeah the lower half on the driver side is pretty easy to get off. The glovebox is a right pain in the ass to get out as there is a hidden seventh screw which is behind the centre console panels. Getting the top half of the dash out is probably another kettle of fish and the problem with pulling any major interior panels off is that if you don't know exactly what you're doing when you put it back together you'll most likely have more squeaks and rattles then when you started.
If it sounds like it's in the aircon it might be worth getting a scan done on the aircon module (if you can). I know with the climatronic you can scan it for fault codes.
Cheers,
