The springs sit on a height-adjustable perch in most cases.
So, reducing the height of the perch will lower the car. If it doesn't have these, you may need to look at a different pair of rear springs.
I currently have XYZ coilovers fitted on my v5 vw bora and I can adjust the fronts but im a bit un educated on how to lower the rear coilovers and if there is an easy way to do so?
Any help or advice would be helpful! Pictures videos or anything! Thanks

As above.
I use to find mine difficult to remove so would remove the spring, the perch up or down as desired, then refit the spring.
Yeah the spring sits on a perch but you can also adjust the spring itself as it has 2 adjusting rings that sit on eachother one ontop and the other underneath it, so to adjust the height you only adjust the perch not those rings?
Or do the rings just adjust the tension of the spring and hardness of the ride?
Have you got a picture of the spring in situ?
Usually the adjuster has a couple of rings on it that lock to stop the setting from changing.
The hardness of the spring doesn't change, only the height of the car. Due to mechanical advantage, a turn or 2 on the adjuster will lower or raise the car much more. So don't go mad if you only want an extra inch drop.

There are only 2 adjusting rings underneath the spring but they are very awkward to get to because of this perch they sit on to adjust them, which ring do I adjust the top or bottom ring for height adjustment? If any haha, ill get picture later as im not home sorry
You need to move both. they act as a locking collar to stop them from free spinning. You 'unlock' the ring furthest away from the spring base so that you can in turn move the closer ring....
thats as dumbed down as i can explain is.
