You know your engine, body, suspension and all that. The only questions you have are around the gearbox and the longevity of the engine.
Do you really want manual that much? Or is this all about the DSG and it's potential failure?
What's the cost of a manual conversion (as a worst case if the DSG packed it in?).
What the cost of a replacement engine if it went bang one day? (and what's to say that wouldn't happen with the newer one anyway??).
When it comes to bells and whistles, what would you actually loose? Do you want those things? What would be the cost of getting them back? (Even if you say you won't there is a good chance you'll be telling us all how you missed that xxxx option so bought one cheap somewhere...
)

For me I would find it very hard to "upgrade" to the same car. Half the reason I still haven't upgraded our 2010 Multivan (T5.2). In your case you will actually be losing somethings too! (and the stamp duty cost of transfer which is on market value too).
If someone rocked up to my driveway with spec for spec the same car except in manual vs my DSG and said "the wife can't drive manual so I'd like to trade"... I'd consider it... but I'd always be wondering what was wrong with it.
