Certainly, I have.
Got discs on Monday and should change them on Saturday. ATE discs and ATE pads. Could also get slotted discs for $300 a set and $400 for front.

My brake light and buzzer has come on so I guess I need new pads at a minimum. How hard a job is it to replace the pads? Any trick to retracting the pistons? Whats the minimum thickness for rotors? Van has 107000 kms on it.

Very easy, piston just screws in. I did another 20,000km after the warning came on, just cut the wires from the sensor at the right inner pad and joined two wires together - warning is "off" easier than with VCDS and saves you time to reactivate alarm when new pads are fitted.
DBA Rotors no.
Front DBA 2248 , SLOTED 42448 Min Th. is 25.5mm
Rear DBA 2247 Min Th. is 19.5mm
Brake pads min th. is 2mm front and rear

I've got to do the rear pads on my T6, which way does the piston wind in please, clockwise or anti?
Clockwise.
You'll need a tool that pushes the piston as well as turns it.

Yes there are special tools but if your a handy man you can make your own . I used a large socket the same diameter as the piston and then ground out a bit on each side to match the lugs on the piston , has worked for me for years now .
