No, it won't make any difference to the sound as far as I have researched, but will give a performance gain. Been looking to find the time to remove mine as well.
i have just removed both mufflers on my sons 2.5 t5 and replaced them with staight thru pipe to make it breath a llittle easier. the end result is it barely louder, just a bit deeper, certainly can't tell the difference inside the cabin. would the cat converter be the reason it's so quiet??

we took the middle muffler off first, thinking the back one was resonator. no difference noticed, so cut the back one, with only a marginal difference as mentioned. both are heavily baffled and weigh heaps. just the weight saving makes it worth it. it's an odd size pipe, so it needed 2 1/2" pipe slightly stretched to go over. actually sounds good!
turbo's don't give out much exhaust note at the end of the day. you have a turbo between the valves and end of the pipe. only high performance things like scoobys etc get a deep noise. even they are pretty quiet for what they are. If you want a fully sik sounding car, you got the wrong one..
must be something with the vw's or it's the cat converter. i know someone with a diesel vito with no mufflers, and his is heaps louder and you can hear the turbo spooling up easily and his doesn't have a cat converter
