Whats are your plans for it?
First of all we need to get it registered, so fix the rust and the panel damage as well as minor things like replacing belts and hoses that are a bit old. Once that's done and it can be driven somewhere other than the backyard, we'll work on redoing the interior and getting new wheels and possibly a respray (seems like one of the biggest decisions to make!).

The plan is to keep most of it original for now, including the engine, seats, dash etc. But I might change my mind down the track!

I can't tell if the bonnet is dinged up in that corner. I have a straight, rust free bonnet if you were looking for an easy way to make that rust disappear.

Considering you're in Brisbane and would save me dealing with shipping it, you can have it for $80.

Some progress has been made on the Golf!
The rust in the boot has been sorted out (ground back to bare metal, sanded and painted with POR15) and the seats and the carpet have been taken out. I now have a new bonnet as well (thanks to BJ) which has also been stripped back to bare metal - it was at least 3 different colours in it's lifetime.

It seems like it's taking a long time to get it all done, but it's getting there slowly but surely. Big thanks to everyone who has helped me so far, your advice is invaluable to me.

The next steps will be to replace the rusty passenger floor pan and attack the rust in the engine bay.

    The rust in the boot:

Seats taken out and starting carpet removal:

    Carpet finally taken out:

It's amazing stuff, quite easy to use as well (just don't get any on your hands, it took weeks for it to come off). Yep we're going to do both the passenger and driver's side since there are small spots of surface rust here and there as well as the major bit that needs replacing.

There hasn't been a huge amount of progress on the Golf over the past few months. Not having much free time and learning as I go means that things get done very slowly.

The rusty passenger floor was removed (I learnt how to use an angle grinder for the first time) and the new pan was put in place. The seat rail crossmember had to be removed and I'm trying to find a replacement since it's also rusty. Otherwise I'll have to repair the original one.
The new pan has been tack welded into place (I also dabbled in learning to weld a little bit) and at the moment I'm shaping other small bits to fill in the gaps where the floor pan didn't quite fit.

Unfortunately in the process of removing the sound deadening from the passenger side foot well, I found more rust It's on the upper part of the foot well and goes all the way through to the wheel arch. So it's yet another bit of rust that needs to be patched and welded etc.

I'm hoping that the body work will be done sooner rather than later, because it's really feeling like it's dragging on a lot at the moment!

You say not much progress, but if you don't have a good base everything is wasted, the progress may look slow but it big
