assuming you could wire it and plumb it, I dont see why you couldnt use a mk3 pump, like this

They do seem to be the same pump. I cant confirm that the fittings are the same but it would really surprise me if they were not.
I ended up just using the power steering fluid in our mk1 because it had a very, very slow leak somewhere that I never found. I think in 3 years I put a 700ml bottles worth in it.
If it was me, I'd be going for the mk3 pump setup even if its not a straight swap, just because then you're only going to have to look for replacement parts that are 20 years old
