Im in a predicament at the moment! I've been researching about ignition coils and I'm looking at a bosh GT40R, Is this coil suitable for my 1600 dizzy or would I need to look for another one??

The GT40 R is for use with a resistor.
If your car was originally a petrol car the GT40R should work as there's resistive wire in the MK1 loom.
If your car was originally a diesel go with the GT40 (non-resistor version.) as the wiring loom doesn't have the resistive wiring.
This is assuming you've got points in the dizzy and not electronic ignition.
If you've got the MK2 Electronic ignition then you need the bosch MEC717 coil.

I've replaced my mk3 electronic dizzy for a mk1 1600 dizzy with points, so ill need to look for a bosh gt40 which is a straight 12v if im not wrong?

I Would of looked like a nutter walking I to a auto supplier and asking for a ignition coil that I don't have any clue on!

update: after a week waiting a courier decides to drop off my mk1 headers from raceland which are based in the US, this parcel enlightened my day so i got productive!
ive also ordered few things from VW heritage from the UK which hopefully arrive by the end of next week!
what i did on my mk1
-installed mk1 headers
-unbloted fuel tank
-emptied out diesel from the tank
-installed fuel pump
-took out back seat
-took out underlay from the boot
-wire wheeled all the surface rust
-deoxidized the boot were surface rust was
-etch-primed the surface of the boot
-sprayed matt black to give it that finish
mk1 headers
stripping/respray
im contemplating on spraying the rest of the boot black. in need of some thoughts either spray it lemon yellow or black?
also whats the best method of cleaning the diesel tank?

I was having a look at it and It looks like the lemon yellow :/ not 100% sure

Yeah comparing it to your pictures it does look more like lemon yellow. Mine has a plate under the bonnet just above the grill which tells me which colour it is. You could always get a spray can made up in each colour and try them out.
I've seen that plate that's on the radiator support it doesn't comply with any of the letters and numbers of the code On that chart!
I might just get lemon yellow cans made up from auto one they both look very similar
