Personally I'd go for the 225/40/17 it is a more appropriate tyre for a 7.5" wide wheel.

They'll fit fine on the upgraded 6C GTI 7.5" wide rims, I probably would go putting them on the older 6R GTI 7" wide rim.
Keep in mind that they will knock the speedo out a very small amount, but they should be fine.

The actual width of tyres varies between brands (eg; a 225 can be 220 mm wide or 230 mm wide), but in general 215 and 225 are considered the ideal size on 7.5" wheels, with 205 considered the minimum and 235 the maximum.
The 225 40 17, depending on the individual tyre, should be around 3% larger in diameter when new which would just about offset the conservative speedo.

Your biggest problem is finding 225/40R17 tyres...
Whilst we are on Wheels/Tyres ect. what pressure are people running on their Polo GTI?
Any one know if a 16 will fit over the 6c gti front brakes? Thinking of getting sticky tyres for circuit work and more options with a 16
