Hi - my brothers 2007 Polo GTI did this so im sure the new ones would as well. The electric water pump runs and flows water through the motor/turbo to cool it down after switching the engine off.
Youve certainly got the right mindset with letting the turbo cool after a hard run, but in that situation i generally drive sedately for the last minute or two before stopping, then let it idle for 30 seconds before i shut off.
With general commuting etc it isnt necessary. Most of the time if you are parking etc the engine has already been idling long enough to just shut the engine off straight away.
This is my 3rd turbocharged performance car over about a 10yr period, and i have done the same thing with all of them and never had an issue.
