I'm only getting it dealer serviced while it's still in warranty, purely because if anything major fails after the warranty is up, VW are known to be pretty forgiving if it has always been serviced by them. I figure it's worth the extra few hundred $$$ over 3 years.
where was this done? was the brake fluid flush itemised?

That is your sphincter simply reacting to the price you were made to pay for dealer servicing, hence why the feeling wears off over time and by the time you get around to the next service it feels loose and need of retightening again.

That you paid nothing last time is simply the 'flight or fright' instinct that is programmed into any rational person so that responds whenever you get within a close proximity of a 'Authorised Service Centre'. My research into this leads to the scent of cheap cologne has contributed widely to this phenomenon. It is not just a VW related one either, it works across most European marques. Test it for yourself.

Go put air evenly in all your tyres, then add 6psi. Very old service centre trick taught to me by my mechanic brother.

So a mixture of cheap cologne and tire air pressure creates a placebo of tightness caused by the sphincter adapting to the sudden loss of hard earned moneys.. causing the "tight arse" effect to kick in giving you some scene of perceived value..

    Makes perfect sense lol!
