You're right, that won't stop it from trying to start... it's very odd but still sounds like something isn't connected properly. Did you check for voltage across the starter connector when trying to start it? Even more grasping at straws and going back to Sam's question, have you tried taking the starter out of the gearbox and sitting on top of the gearbox with wires all connected and trying to start?
i'll have a look tomorrow but wondering if there's a gear selector signal for reverse that might be high/on (incorrectly) preventing cranking. I think there is a small 2 pin plug that goes onto the box somewhere and if thats not connected it could cause your drama.

My father thinks it might be because I went from the stock dmf to a single mass flywheel. Would that be my issue
WAIT. are you a million percent sure the starter motor's pinion sits right into the driven gear of the flywheel? (The teeth are lined up, peek hole to double check.) They should be two gears meshed together. If you have a gap, would make sense. But from the initial diagnostic that the starter doesn't even turn over under load(when it's meshed with the flywheel) might be that it's buggered, try buy another and check if that is the problem.
On the other side of the engine at the bottom, you have your crank. Put a socket on that and test if the flywheel spins from the rubber peek hole(I think Sam suggested this earlier). if you have the wheels up, try put it into gear and check if everything spins by turning the crank(WILL BE TOUGH) Or take it out of gear and spin the wheels by hand.
If it's not mechanical, it's electrical and the boys have suggested pretty much everything there is..

The starter pushes the pressure plate through this. It isn’t a full lock up, hits enough to make a lot of bad noises.
If you can turn it over by hand it’s not the pressure plate fouling, especially if you used an OE spec pressure plate. It’s only the aftermarket pressure plates that foul
Yes clearance tool is handy. But you can see clearly what needs to be shaved down.
I haven’t bothered to read the thread cause clutch change and then no start would tend to mean you’ve not connected all the wires correctly.
Starter ground for example gets left off often.
