well adding a line level converter is one way - but i would definitely add one which has some form of processing if i was going to be using any equipment that is high end in nature
ive heard factory headunits sound great with JL Audio cleansweeps and rockford fosgate 360.2's - but i really didnt care much for factory headunits with just line out convertors cos those dont really flatter your sound too much (euphemistic way of saying - dont waste your money on aftermarket amps and speakers if you dont want to change the headunit)
but those units like the cleansweep or the rockford 360.2 afford so much processing control that they actually can make the factory headunits (from any factory) sound half decent
BTW there wouldnt be any cutting involved to remove the factory headunit and replace it with an aftermarket one - all the headunits i know (single din) would fit perfectly in a polo gti - and you would only have problems if you got one with the rca connections fixed to the back and on the wrong side or an unusually deep unit
heres the best i can do in terms of a pic of the headunit fitted - sorry it isnt a closeup pic - ive never taken any - this is my old alpine unit fitted - the new kenwood ive got in there fitted even easier and because it is actually brushed aluminum integrates far better with the colours of the dash now
if i had a choice of using the stock headunit with a processor or using an aftermarket headunit - the aftermarket one would win 9 times out of 10 - the one circumstance where the stock headunit would win is in high risk theft areas where the aftermarket stuff would draw undue attention resulting in losing your audio equipment

Or you could go all out and add a screen too.
yours and the last one look good, but the middle one....
i think i'll have to get a double din unit, they look too aftermarket for my liking :p
