and try and get 19" on it
not saying that its impossible but it will be difficult especially with your drop - ive got 18's on mine and it isnt dropped - and its already a tight fit

    and also see here

if you can find the 19" in 5/100pcd with the correct offset then by all means you can try it out - but remember that with the 18's the 215/35/18 tyres are already a little bigger than the 205/45/16 that the polo gti uses - and going to around a 225/35/19 would hectic since that makes the diameter go from 23.3" for the 16' to 25.2" - as it is mine went from 23.3" to 23.9" and you can see that there isnt much room left

you can find a calculater to compare tyre sizes here

    http://www.miata.net/garage/tirecalc.html

and remember to use sizes that are actually obtainable - some sizes you may not be able to get - so IMHO it becomes a bit too big and your gearing gets affected - so extra strain on the gearbox as well as extra weight on the drivetrain - sometimes this doent affect you too much - but going so huge is gonna surely cause some strain - besides the ride will be terrible especially on potholes and more so considering how much you have your car lowered - if you can get the correct fitting and decide to go for it then i think you will have to modify the fenders on the car big time to allow the extra width as well

having said that its more or less the same as putting 225/40/18 tyres on my 18" rims - so its definitely doable but not 100% advisable - if you can find the 19" rims in 5/100pcd with the right offset then id love to see how those look - but you will probably have to adjust the ride height a bit otherwise you will definitely have touching problems

EDIT : forgot to mention that your car looks great - and i like the small touches you have done to personalise it

Call KMAC direct, speak to Kenny and tell him what you want. They will send the springs over to you.
