tis all cool johan just had the chance to test fit some so thought i would let everyone know what the deal is
Sorry, should have said 288mm required for the Polo. Some Mk4 GTI's had 288mm and some had 280mm.
The 312mm upgrade is the one to go for, but requires new calipers and carriers.

I think these are the part numbers you'll need (excluding the 312mm rotor, which can be had from DBA and others)
Audi S3/TT brake calipers:
8N0 615 423 C (LH caliper)
8N0 615 424 C (RH caliper)
Audi Caliper Carrier 8N0 615 425 (x2)
The Audi part number of the 312mm rotor is 8L0 615 301 (again, x2)
The stock wheel will still clear these (well, if they have the same offset as mine, which was an April 06 build...why did they change that, Tim wonders?)
I thought this was already in FAQ & DIY sticky, but couldn't find it
Addendum: the critical piece of kit is the caliper carrier, which is -- AFAIK -- an Audi part. The calipers from the Mk IV GTI (with larger rotors) will work, and there's a VW part number (if I knew...). These calipers were also used on a turbo version of the new Beetle

Single piston, Eddy. As to "that much", it depends on usage: if you're going to do any track work, then much better, but you probably wouldn't notice it too much over stock size, one you've fitted decent pads & fluid.
As to the Brembos on 312s, I'd suggest checking with Guy, as I'm sure that will put you into 17" wheels and -- as jamesatfysh has discovered -- not just any old 17" but either the default option TT/S3 wheel...or something more ...exotic

As Jason will tell you. He tried to fit Alcon calipers on 312mm rotors, but couldn't as they required TT/S3 wheels or 26mm spacers.
