The new regulations introduced on first May make it difficult if the car was not available new with a non airbag option standard. Same as with roll cage installation, there are certain requirements to maintaining the factory safety systems in conjunction with modifications.
One option is have a race seat & mounts ready to bolt in for track events - switch it over & switch it back when you get back on the road.
Civik type R, Madza rx8 seats perhaps, even R32 golf (3 door), i've been looking at the same thing i think only the late model jap ones have side airbags...
Recaro SPG or Bride LoMax can be interesting options
The R32 and Mk6 R came with optional sport seats that didn't have the side airbags. The computer is tricked with a bypass connector to stop the warning indicator. You could troll some of the euro wreckers for the seats and leave your details with them. Audi S3 also had a sport seat option and being the same car under the skin, it would also be a bolt in job. Having a two door makes it a bit harder to find seats but they will be out there.

I'm seriously considering fiberglassing the back and sides (without affecting the airbag , then adding hard foam in a contour for lower back support, then potentially modify the trim.
i also find the seat bottom quite poor for long trips and may mod that too.
at leat the above is cheap....
