I'd be flashing the car, keeping the ECU working normally is a good idea with the stupid number of sensors on out car. I'm not aware of anyone having done this on the Polo, does not mean it cant be done well...
You can get a Unitronic flash pretty cheap.
APR is the most expensive but offers the ability to turn it on / off.
Revo and Giac seem a little more agressive than APR, but there don't seem to be any more or less issues with the cars with these tunes.
Custom Code has the benefit of doing some tuning to your car, not just a generic map (don't know who else does this).
I'd talk to a dealer of each and see who you click with. We are lucky to have Jmac as our resident helpfull mechanic with a lot of Polo GTI experience and Gav who is a Custom Code dealer who is willing to divulge a little more info than you can juice out of most...

I have the tune done but the hardware to let me write the data to the Eeprom isn't here yet, i ordered the wrong part Doh !!!. If it had an ME7 ECU like yours it wouldn't be a problem at all.
I've also got a leaking dump valve so I'm getting a TurboXS unit to replace that through the week, sadly everything on the car is original. The K03 has a slight whine to it I think - well I hope its dying as I need an excuse to put a hybrid on there
In short I'll have the remap on the car and sorted by the end of the week
i'd go with customer code - top block , actually knows what's going on , can turn your polo into a torque steering , wheel spinning little car
