Get a plastic wedge, most of the trims will come away, and the sunglasses holder will also drop out with a wedge at the top, then you should expose the screws required, hard to explaint without showing...........vwtech...............

I am soon to have to remove the trim around the overhead area where the sunglass holder, lights, and motion sensor doobys are and I was wondering if anyone had done it before. And if so, how did they do it?
Reason I ask is that I would rather not go blindly removing stuff with the fear or damaging the security system, or breaking the trim. I have searched and everything is about removing the A or B pillars or centre dash trim, yet I wanna know about the overhead trim.
Any help would be great.

I had some trim removal tools from Jaycar, however they weren't thin enough to remove the cover. It was quite easy to do with a thin card (like credit card) without marking it in any way. Wedge in near the corner where the grill is for the microphone.
Buy a decent set of trim removal tools as they have all the parts you need to remove the trim in the Golf. The jaycar set is poor value compared to a decent set below.

Jaycar set includes the first three in your link. Not great value but I needed then and there so they were the only option. Even still none of those tools are as effective as using a slim credit card style card IMO.

The best tool for trim I've found is the genuine VW trim tool. I don't know what the jaycar trim tool set costs but the VW tool is only a couple of dollars and is worth it's weight in gold.

I got it at my local VW dealership which ihappen to work at. They didn't have any in stock but VGA Sydney did so they were able to get it by lunch time. Sorry I don't have a part number handy, if you send my a PM some time tomorrow I might remember to look into it. I just did a google search for VW trim removal tool and found this picture which is not the tool I am talking about but would likely do the job if you can find it:
