Whilst I bought my 5 door from stock, I still would have ordered the same and I don't have a family. It's about accessability, I've had 2 coupes in the last 7 years and whilst they look great, the doors are much bigger which limits tight parking options (getting in and out). I also play golf and often have 2 sets of clubs in the car, easy access to the back seat, including folding the rear seat easily was a big factor. Especially now I have put a sub in the cargo area, the back seat is now the primary carrying area for clubs.

Same here, I bought a 5 door. No kids, don't play golf, in fact the rear doors on my current car might get opened a handful of times a year.
Main reasons are when I do have passengers, they can get in without having to dive over a seat, but the main reason is at resale time I am not limiting my market. Too me people who own a 3 door, could live with a 5 door (may not like it, but can live with it), but most of those with a 5 door just couldn't live with a 3 door. My neighbour for example has a Golf, and she has two child seats in the back. There is no way she could get away with a 3 door and having to strap in kids.
