The GTI Ed35 is a performance model running a petrol engine with way more power and a stiffer suspension setting, whereas the Bluemotion is focused on fuel economy and has a diesel engine tuned for economy. I dunno how you can compare these two as they have two very different focuses. If you are after relatively strong performance with great fuel economy, maybe you should take a look at the GTD instead.
4) The short answer is YES. You can't master how to drive a manual just by watching some videos... And the Bluemotion is a diesel you have to shift earlier compared to a petrol. You should at least borrow/rent a car with manual to have some practice before you actually drive one.

From what I can tell though, it doesn't seem like you know what you are after. I think you should ask yourself what your priorities are, so that you know what to look for when you go in for a test drive. Hope this helps.
