My MK6 GTI was done at 15k, the sticker on the windscreen from the dealer states next service at 35k.. Is this OK? Not sure what the manual says, its not in front of me.

^ looks like they made a mistake on your sticker. Service intervals are 15,000km or 12 months (whichever comes first). So if your car was serviced at 15,000km then your next one is due at 30,000km.

Brake fluid is time-dependant (2 years), pollen filter is recomended every 30,000klms.

Well, no. Because as has been stated by numerous current and former VW/Skoda/Audi dealership technicians on this forum, the service book is not specific to the Australian market. The correct service schedule is provided to you by the dealership in check-sheet form, attached to your invoice

The only reason I quizzed you on this in the first place, regarding Volkspower, was to ascertain if they indeed carried out a 30,000klm service for the minimal money you paid

Suit yourself. So far I've had the minor services done at the dealer and major at VP, and no complaints here. I had no issues at the time but cannot recall details that far back, so if you're curious just give them a call.

Mine is due for the 30,000km service soon. Should I go to a VW specialist workshop or back to the dealer for servicing? I'll obviously compare prices, but am thinking the specialist places will be cheaper.

I ask because I've always gone back to the dealer for servicing with my prior vehicle, but that was Japanese and servicing costs were cheap.

I think you're mistaken. Not all Japanese car servicing is cheap, my ex-Honda Jazz costed more to service annually vs my GTI at the dealerships. A Mazda 3 servicing schedule, when enquired costed about the same as my VW GTI as well.

30k service for me (103TDI) was usual oil and filter, windscreen fluid additive stuff, cabin air filter change, brake fluid flush and change. Radiator fluid should not need to be done at 30k.
