The console doesn't actually let you totally disable ESP - it just puts it in a milder setting.

Love to hear from someone who tries this mod

    Really ?

I thought MY12s post June 2011 it was a new system that allowed it totally off

For track, value is there but no value whatsoever for road use

Don't see the point of it in my case since I'll never be on a track and FWD cars will just understeer.

Not quite. The ESP can be put into a suspended state, but if you touch the brake while you're having a moment, the car will automatically re-enable it. This is a safer compromise for road use, but still doesn't make the car 100% track-friendly. In the US, they don't even get that feature - it's ESP-on all the way.

The mod being discussed on VWVortex will disable the ESP completely - it won't be re-enabled by a touch of the brakes. Only by switching ESP back on or restarting the car will it kick in.

Apparently you need this specific ABS Controller hardware, and this (or later) software:

Apparently a part number ending in BG may also work in some cases. However, these parts appear to be specific to late 2011+ build Golf Rs, GTIs, TSIs and TDIs, Skoda Octavia, etc.

Several Golf GTIs with this same ABS Controller have also accepted the coding change and will allow the ESP to be disabled. AFAIK it's just US and Canadian cars that have been coded successfully thus far.
